You should be in good shape. In Mexico, fermented pineapple juice is really rather popular as a refreshing beverage. Tepache is fantastic, and you can create it using just the core and rind of the pineapple, allowing you to consume the pineapple flesh while also making (weak) whiskey out of the items you would normally throw away, plus some sugar and water. Pineapple that has been fermented is my favourite!
